Bssissa Barley Dates - My participation in the Contest Dates to Me My GAL
Hello everyone, these days I do not really have time to cook, or blogger, or visit my favorite blogs ... But I really want to participate in the contest Leila's fabulous blog Gourmet with Leila, My Dates to Me.
My first recipe that mom and also a classic of the Tunisian cuisine Bssissa. This one is for barley, it also bears the name Zammita.
I'll give you the recipe found in Ommek Sannafa regarding bssissa powder and the preparation that is mine.
Zammita, Ommek Sannafa:
Barley: 5 kg, coriander seeds: 1 pound, fennel seeds: 1 / 2 pound Salt: 15g (in the south, sometimes added marjoram and fenugreek, but I do not know in what proportions). This preparation
is generally purchased ready.
"The [...] Zammita is consumed as a paste with or without sugar, mixed with oil in which it was incorporated seeds raisins, fresh grapes or pomegranate or simply accompanied by figs dry and prickly pear.
You need for my recipe: 1 kg *
bssissa purchased ready (Tunisia) *
200g almonds 250g *
Chamiya Almond Halwa (sweets Tunisian-based sesame paste) *
150g granulated sugar * 200g
liquid honey * Olive Oil 250ml
Start with roasted almonds.
Bssissa Place the powder in a large bowl.
Coarsely chop the almonds.
Add to bssissa powder, oil and mix with hands.
Add honey,
then chamiya halwa and dates, and almonds.
Mix with hands.
This delicious preparation is extremely well preserved in an airtight container! It is ideal during the holy month Ramadan, and during the holidays ... with a good full-bodied black tea or tea ...
